BABA'S BAKED CHICKEN WITH RICE: Date Added: 27 Jul 2010

Ingredients

1 - Fryer chicken (approx. 3#) cut into 8th's
Canola oil
2 - cups Brown or White rice
1 - carton = 4 cups of low sodium Chicken Broth
1 - med. Onion diced
1- clove of Garlic minced
6 - shakes of VALERIE'S ALL PURPOSE SPICE, STEAK N' CHOP SEASONING or SOUTHWEST SEASONING your choice.
10 - Mushroom caps sliced (if desired)

Cooking Instructions

PRE HEAT OVEN TO 350 degrees F.

Wash chickens thoroughly, pat dry, then cut into 8th's.
Season chicken with your choice of VALERIE'S SPICE or SEASONINGS, then brown chicken in saute pan with canola oil, skin side down until a rich golden colour, turn chicken over & cook until juices are sealed.
Remove from pan and place on platter.
Wash rice thoroughly until water runs clear - drain.
Pour oil once around dutch oven .
Saute onions until translucent, then add minced garlic (watch carefully that the garlic does not burn or you wil have to start over again).
Saute mushrooms with onions and garlic after onions are softened.
Stir.
Shake in the VALERIE'S SPICE or SEASONING of your choice.
Stir and keep on stirring during the process.
Add rice and stir, once rice has blended with previous ingredients.
Pour in Chicken broth,
Empty contents of pot into a baking dish (or roasting pan).
Shake roasting pan or baking dish gently to distribute the rice mixture.
Place chicken pieces gently down into rice & broth.
Cover and seal tightly with Aluminum foil.
Bake for 1-1/2 hr's.
*****My mother -in-law used to make this and the house was filled with the aroma and made your mouth water. We could hardly wait for this homey dinner to be finished so we could sit down and.......
